Pancit Canton with Love

It's just a simple dish really and it only takes abouv 15 to 20 minutes to cook. This is good for 2 to 3 persons.

The Ingredients:

1/4 Pork or Chicken meat cut into small bite size or you can slice it into strips
4 Garlic
1 pc Onions
1 pc Bell pepper
1/4 of the whole Cabbage slicef thinly
1 Carrot cut into strip
Soysauce and vinegar for marinate
Salt and pepper to taste
Umami if you want

The Procedure:

First, put the fat of the pork into the pan in a low fire. Wait for the oil to come out. We will use the fat of the pork as the oil that we will use for our Pancit Canton. While waiting, marinate your meat with soysauce and a little bit of vinegar. Put a pinch of salt and pepper into it, too. After seeing that the oil immersed from the fat, put the garlic, onions, then bellpepper. Stir it including the fat. Put the meat after. Let it cooked for about 5 minutes then put the cabbage and carrots. Wait again for another 5 minutes then put water of about 1 cup. Put a pinch of salt and pepper to taste. Make sure it isn't that salty cause the pancit has flavor already. When you see that the water is boiling, put the pancit canton until the water has disappeared. About 2 or 3 minutes or so, it is ready to served.

No Heat Curls

So this is my first attempt in doing this no-heat curl on my hair.. i found this tutorial on youtube and guess what?! you'll use two pairs of socks in getting these curls..

this is my straight hair.. it must be damp or dry...

and then roll your hair into the sock and tie it like what you do in a ribbon... done this in the evening.. let it stay for many hours as possible.. in my case, i slept on it. :D

here's the no-heat curl.. i still need lots of practice until i get the perfect curl that i want.. :) (excuse my eyebaggages, just woke up.. got soooo excited in posting it..)

perfect for summer!

What's In My Make-up Pouch

If you've read my previous post about me saying that i don't usually wear make up, well, that was before. Things change and interest of trying new things began.

After watching make-up tutorials on Youtube, got an idea on what suits my personality. And that is... minimal or nude like there's no make-up at all. It ain't a hassle cause there's no retouch whatsoever when you go out (trust me, there's no time when you have your child with you when going out).

My make-ups are just the basics. I am still starting or shall I say --- a beginner.  Still.. I don't use make-up everyday. Make-ups are for special occasions or times whenever i want to feel extra beautiful. :)

My Bundle of Joy

Time flies and now you'll turn 2 this February. It was just like yesterday when i held you in my arms. So little and so cute. You remind me of your father instantly cause you really looked like him even when you're just a few days old.

Taking care of babies or children was never my forte cause i didn't have the patience for it. But when you came along, it all changed. I begin to take care of you and love you. You were different, you're mine. Patience? sooo needed it. Eventhough, the first 3 months after you were born, i had little amount of sleep and rest but still when i look at you I feel energized.

Everyday is a challenge. New things to explore being a mother. I become a mom, truely a mom, because of you. Motherhood becomes me. I devoted my life and time for you, sweetie. You give meaning to my life. You are my purpose.

For two years, you made me and your dada so proud. You learned quickly. You like the things that we like. You sing and dance and play music instruments even when it is out of tune. You also make us happy and laugh at your cute actions. Though you're not a perfect kid, you have days when all you want to do is whine or faking a cry but it's ok Honey cause we know that you are not feeling well.

We love every bit about you for these past two years. We support everything that you love and like. We are most proud of you eating vegetables and fruits and still do. You love to eat and munch them. I hope this won't go away. And you learn how to pray! constantly teaching you the sign of the cross and to pray to Papa Jesus. Amazed that you are really eager to learn like the ABC's, the numbers 1-20, and the nursery rhymes.

Kookay, as i fondly calls you, means the world to me. If, by any chance in the future someone will bully you or harm you, i'll be your protector. I'll be mad and be worried if something bad happens to you.

For the future Kookay, my wish is that you continue to be our sunshine over the storm. May you always love eating vegetables and fruits. May you always love mama and dada and hug us and kiss us every chance you get. Be strong and be a fighter. Wish that you pray to Papa Jesus for protection.

I love you, my baby! and i wouldn't trade you for anything. I am glad that when i want to have a baby, i chose your dada to be your father cause we had you and made us great parents in taking care of you. Love you loads!

My Love Story (2 Years of Being Married)

Yes, it's been two glorious years of being married to my wonderful husband.

We have (like most couples) ups and downs in our relationship but we try our best to work things out.

Ours ain't perfect but i married my bestfriend and that'r a plus for me. We actually never had a formal courtship or dating as boyfriend and girlfriend used to do or use to be doing nowadays. Back then, we just simply hang-out. Ours was not the conventional love story. Well, it started as a deal of wanting to have a baby cause we're both old enough to have one. And it did happened. It was a rocky start. Gallons of tears falled from my eyes as i remembered it. Liters of gasoline was wasted from my husband's end, why? because of going to our house back and fro.
I almost gave up on him but he didn't. He prayed to God for a sign and God gave it to him. That's a relief! I also prayed to God for only one name to be my future husband and He gave it to me. They say that when you pray or want to ask something, you should tell Him what you really want and not going around the bush and tell the ideals or stuff like that. God will be too confused on giving you what you really want.

Our first month was a breeze. Adjustment? none. As what my Mama told me, we were like two couples playing "bahay-bahayan" cause we laugh a lot and kid a lot with each other. We, actually, didn't realized that there is a bigger picture out there for us to focus on. Sure we plan on what we must and need to do but we kept it one step at a time. We didn't pressure ourselves about the situation we put ourselves into. The Baby in my belly and Us was our focus first.

Then, my husband popped out the question of us getting married. But before that, my Mama kept on pressuring me bout it and told her that i won't push him into something that he's not ready. So i waited and glad that he did. We got married and officially become Mr. and Mrs. M. :)

I remembered that day. It was simple yet memorable. We laugh a lot eventhough we're not complete then. Even our baby joins in the celebration. And that's the start for us to really be a husband-and-wife and be the parent for our unborn child.

It was a struggle knowing that we are miles away from each other. Back then, i stayed with my Mama in Gen.San and he has to work in Davao City. Eventhough we missed each other, we sacrificed until our baby was born.

God tested our marriage when after our baby was born, she was admitted to the hospital because of complication and jaundice and that my baby's heart is very weak (a vein outside the heart didn't close up, idk the medical term). We become strong for our baby. We see to it that we are there for each other. And i feel that my husband loves us so much cause he took care of us even if he's tired. But thank God that our baby's a fighter, we got out of the hospital sooner than we had expected. We felt relieved and happy and thankful.

A whole new chapter and experiences opened when we decided that it's time for us three to be together and live in one roof. It was the hardest few months. We adjust like big time. Sleepless nights. Crying. Arguing. Tough times. But slowly we found the rhythm and it was good. It taught us a lot of things from each other.

Time flies and we're on our 2nd year. Minimal adjustment. Argue on small things. We laugh and cuddle a lot. Division of labor to make everything run smoothly. There's still the issue of budgeting our money. I still gave him the freedom to go out and hang-out with his friend ONLY when there's no ladies around. I rarely get jealous but you know... i trust him but not the ladies around him.

I am just thankful that for two years, my husband still gives me the butterflies in my stomach. Thankful that he's been very patient and understanding when i am under-the-weather sometimes. Thankful that he loves me in all my imperfections. Happy that he's always been my #1 supporter, taster and critic in my endeavors. That's why i also love him that much! i may not see it but his actions speaks for himself.

The End

Inato na Binagoongan ni Nana

This recipe is a simple pork dish. It will only take like 30 minutes to do this.

The Ingredients: (depending on how many you will cook.. estimate! :))

  • garlic
  • onions
  • tomatoes
  • shrimp paste (i prefer the dried ones over the saucy ones)
  • pork cut into bite sizes (any pork will do except pork ribs)
  • sugar and salt to taste (minimal salt please since the shrimp paste is salty itself---redundant!)
  • 1/2 a glass of water (depending on the size of the serving)
  • magic sarap (in the Philippines we have this for marinade)
  • soysauce and vinegar to marinate the pork
  • oil (any oil will do)

Prepare your ingredients first:

marinate your pork with magic sarap (1 sachet) or with soysauce and vinegar..

a pinch of salt and 1 teasespoon of sugar later

this is the shrimp paste that i'm gonna be using

Let's Start!

First, you have to cook the marinated pork into a pan with a small amount of oil.

Wait until it will be brownish or reddish in color.

set aside..

saute in the garlic, onions, tomatoes, and shrimp paste until it is brownish in color.
use the excess oil in stirring this.. (idk the correct term for this :))

then, put the fried pork cubes in the pan together with the shrimp paste.. let it simmer for 3 to 5 minutes.

put water, wait for it to boil.. then put sugar and salt to taste..

and now, it is ready to serve..

Bon Appetit!:)
